LITTLE ROCK, Ark. (KTHV) -- Many of you have probably heard of a gluten-free diet. It's a diet that's practiced by many, including those with Celiac disease.

Baptist Health Registered dietician Stephanie Alsbrook was on hand to answer questions about gluten. A gluten-free diet is used to treat celiac disease. Gluten causes inflammation in the small intestines of people with the disease. Maintaining a gluten-free diet helps those with celiac control their signs and symptoms and prevent complications. Many foods are already gluten-free like beans, seeds, nuts and fresh eggs. Fresh meats, fish, fruits and vegetables are also good for a gluten-free diet. To get started on the diet, many use a gluten-free shopping list.

Those who do not have celiac disease yet practice a gluten-free diet may have low levels of certain vitamins and nutrients. Avoiding grains with a gluten-free diet may mean eating fewer of these enriched products. Be sure to talk to your doctor to make sure you're getting enough of your daily nutrients.
